I am on a mission this year to find and make healthier snacks for Miles to have at home. I came across these flourless muffins by Chocolate Covered Katie and wanted to give them a try. First, let me admit something to you, I have never baked anything, unless break and bake cookies count. One time I made a box of brownies and failed. Don’t laugh, this is real life.
The ingredients of these muffins intrigued me. The base of the muffin mix is white beans! Anyway they were so yummy and I definitely recommend them. The texture is perfect. It’s very moist and Miles kept asking for more. We stopped him at two. I am going to make a bunch tomorrow and freeze them because I am still in shock that I baked something from scratch and it was not only edible, it was so good.
Here’s what you need…
- 1/2 cup quick oats or quinoa flakes, loosely packed (40g)
- 3/4 tsp baking powder
- 1/4 tsp salt
- 1/8 tsp baking soda
- 1 medium (1/2 cup) mashed over-ripe banana
- 1 can white beans
- 1/4 cup peanut butter or allergy-friendly substitution
- 1/4 cup pure maple syrup or honey
- 2 tsp pure vanilla extract
- Pinch of cinnamon
